Winemaking requires much patience, and following on from the release of our very first wine, the 2018 Sauvignon Blanc, we are also looking forward to sharing with you our inaugural 2018 Reserve Cabernet Sauvignon. ‘Soon Come’ as they say in the Caribbean!.
Cabernet Sauvignon requires significantly more time to craft. Picked in April 2018 following a mild summer, our Cabernet Sauvignon has received kid glove treatment in the winery being carefully fermented with French oak. The wine is looking and tasting superb, with medium tannins and wonderful fragrance, and was bottled in March 2019, for public release in 2020 or 2021.
Meanwhile, the vineyard is looking a treat right now. Winter dragged its heels, but the fruit set beautifully. Our Cabernet Sauvignon was pruned 6 weeks ahead of normal schedule, to give the vines and early start and, hopefully, advance ripening. Cooler conditions delayed Chardonnay and Sauvignon Blanc harvest by approximately 2 weeks, but our efforts in bringing the Syrah and Cabernet Sauvignon forward look successful with early harvest dates anticipated. Following the 2018 harvest, we replanted Block 1 with more of our critically acclaimed and much-loved Gin Gin Chardonnay. Gin Gin Chardonnay consistently out-performs Burgundy clones in the Margaret River region, with bunches of grapes comprising a distinct mix of large and small grapes, the larger grapes giving incredible flavour, and the smaller grapes natural acidity. Our new vines, grown from cuttings taken from our existing Block 6 Gin Gin Chardonnay, are thriving.
